The "Iwashita no Shinshoga®," characterized by its gentle spiciness and refreshing aroma, is finely chopped, wrapped in thinly sliced pork loin, coated with Mai-Sen's original breadcrumbs, and fried until crispy. This product offers an excellent combination of refreshing ginger and the umami of pork.

Mai-Sen's Commitment
Pork: We check pork from all over the world every day and use only approved pork. We remove sinews and pound the meat to loosen its fibers. This is a time-consuming process, but we cannot cut corners. A single missed sinew can distort the shape of the meat when fried and alter the texture when eaten.
Breadcrumbs and Frying Oil: We use fresh breadcrumbs made daily from bread baked with a specified recipe. These are Mai-Sen's unique breadcrumbs, differing from commercial ones in content, size, and shape. Our frying oil is also custom-made for Mai-Sen. We fry carefully, adjusting the heating time. The glossy, crispy, and fluffy spread of the coating, which Mai-Sen calls 'Kenshi' (sword-like bloom), is the pride of Mai-Sen's tonkatsu.
Sauce: Mai-Sen currently produces four types of sauce: sweet, spicy, for sandwiches, and for Kurobuta (black pork).
