Matsuo, born in Fukuoka Prefecture in 1970, joined Royal Hotel Co., Ltd. in 1990, where he acquired the fundamentals of cooking at a Western-style restaurant. He then studied traditional French culinary techniques and knowledge at the grand restaurant "Restaurant Chambord," and further honed his skills at the three-Michelin-starred restaurant (at the time) "Les Crayères" in the Champagne region of France. He recounts that this overseas training was a turning point in his culinary career. He not only visited high-end restaurants but also small eateries and markets beloved by locals, refining his sensibilities by encountering diverse dishes and ingredients. In 2016, as Executive Chef of Rihga Royal Hotel Kokura, he oversaw the cuisine for the reception party of the G7 Kitakyushu Energy Ministers' Meeting.
