**About Sommelier Shinya Tasaki** In 1995, he became the first Japanese to win the 8th World's Best Sommelier Competition. **About Honorary Grand Chef Akio Kamata** After training in Europe, he was the first in Japanese French culinary history to feature 'poisson cru' on a menu.
