[The Strings Omotesando Head Chef] Yuta Izawa Chef Izawa, who excels at creating menus using aging and fermentation to discover the ultimate in ingredient flavors, is a young challenger. It is also a pleasure to see how the ingredients are transformed into attractive dishes through his chosen cooking methods. [The Strings Omotesando Pastry Chef] Yuji Takahashi Loved crafting things since childhood, he plunged into the infinitely expanding world of sweets. After graduating from a culinary vocational school, he spent five years at The Capitol Hotel Tokyu learning the fundamentals of bread and pastry making in the bakery. He then worked as a junior sous chef at The Ritz-Carlton Tokyo. In May 2017, he was appointed Pastry Chef at The Strings Omotesando, where he focuses not only on utilizing the flavors of the season and ingredients but also on form and silhouette, meticulously selecting tableware to create entertaining sweets that everyone can enjoy.
