This course allows guests to fully enjoy the blessings of Fukuoka, including "Chikuho Beef," one of the oldest brand beefs in Fukuoka Prefecture among Hakata Wagyu, and ingredients from the Keichiku region in eastern Fukuoka, the hometown of Head Chef Mahara.
A special lunch and dinner course to fully savor the blessings of Fukuoka carefully selected by the head chef is now available.
Dynamic craftsmanship unfolding right before your eyes. "Chikuho Beef," one of the oldest brand beefs in Fukuoka Prefecture.
For the appetizer, we offer a dish featuring a hamburger steak made from 100% fresh wild boar caught in Miyako Town, and Fukuoka-grown finger limes, known for their popping texture and mild acidity, all rolled in a green tea-scented tortilla. In June, this will be served with jam made from "Toyomitsuhime" figs grown in Buzen City, and from mid-July, it will be accompanied by jam made from green plums harvested this year in Buzen City.

For the fish dish, until the end of June, we will serve a plate combining "Mirai Salmon" from Buzen City with a Yame tea-scented white wine sauce. From July, we will offer wild sea bass from the Buzen Sea delivered directly from the Yukuhashi Fish Market, along with a sauce arranged with Ikuri plum jam from Kanda Town.
For the meat dish, we have "Chikuho Beef," Fukuoka Prefecture's oldest brand beef characterized by delicate marbling, raised with unique feed and fattening methods in Iizuka City (formerly Chikuho Town), Fukuoka Prefecture, delivered directly from Morimoto Farm. It will be cooked to your preferred doneness with artisanal skill. As a garnish, it will be served with seasonal grilled vegetables carefully selected by Head Chef Mahara and yuzu konjac from Miyako Town.

Furthermore, for the meal, we will prepare ketchup rice using a rich ketchup made from 100% fresh, fully ripened tomatoes from Motooka, Fukuoka City, combined with Hakata Jidori chicken, and finished with freshly cooked "Yumetsukushi" rice from Kanda Town. It can be enjoyed omelet-rice style, topped with fluffy eggs.
To conclude the course, guests will move to the open lounge, where we will deliver a mini parfait arranged with Fukuoka Amaou strawberry sorbet, Amaou jam from Chikujo Town, and sprouted brown rice amazake from Buzen City. You can enjoy a blissful dessert time.

Also, during the fair period, grilled scallops from Hokkaido will be available as an additional option, and we have prepared the sake "Hichiku," made 100% with "Yumetsukushi" rice cultivated using environmentally friendly farming methods in Chikujo Town, and the rice shochu "KIRAMEKI," made with "Isehikari," a sake rice with ties to Ise Jingu. You can enjoy a special cup along with your meal.
