Lounge Boutique. These gorgeous shortcakes, loved by all generations from children to adults, are designed to enhance family celebrations.

The Koinobori Cake, modeled after carp streamers to wish for children's healthy growth, is a luxurious item made with plenty of strawberries, meticulously crafted for beautiful cross-sections, much like the traditional French pastry "Fraisier."

Between the light and moist sponge layers, abundant strawberries are sandwiched with a melt-in-your-mouth light cream. You can enjoy the luxurious taste, perfect for celebrations, along with the fresh fruitiness of strawberries arranged to resemble carp scales.

Shoya Nagai spent approximately 7 years at the Imperial Hotel's pastry kitchen, where he devised numerous new products. He then became independent, working as a consultant and a dedicated special lecturer at a vocational school before moving to Canada, where he was responsible for launching the second branch of Thierry Chocolates and talent development. In January 2022, he joined Hotel InterContinental Tokyo Bay as Deputy Head Pastry Chef. From July 2023, he served as Deputy Head Pastry Chef at a 5-star hotel in the United States, responsible for devising and manufacturing menus for all in-hotel restaurants, developing cakes and baked goods for the shop, and also handling management duties. In June 2024, he was appointed Executive Chef Pâtissier at Hotel InterContinental Tokyo Bay. He believes that confectionery is "art," a work that expresses individuality, and that there are no wrong answers, only failures, and everything is correct. From this perspective, he believes that free thinking, unconstrained by conventional wisdom, is essential, and he approaches confectionery making every day with this mindset.
