Proposing an "Evolved" Summer Version of "Stollen," Which is Becoming Established in Japan
"Stollen" is a traditional German bread confection known for being eaten in thin slices during the Advent period leading up to Christmas. Its appeal lies in the "change in flavor" as the marzipan, dried fruits soaked in liquor, and butter flavors and aromas gradually meld into the stollen dough over time. It is now becoming established as a winter tradition in Japan, and in recent years, its flavor variations have expanded uniquely, with Japan said to have the most diverse range in the world, going beyond traditional flavors to incorporate chocolate and fruits. In fact, Seijo Ishii sold four types of homemade stollen in 2025, achieving record-high sales with approximately 120% year-on-year growth in existing store sales*, demonstrating strong customer support.
Against this backdrop of market enthusiasm, we embarked on the development of a summer-version stollen with the desire to "allow customers to enjoy seasonal flavors, not just in winter." Our central kitchen patissiers, who are responsible for developing our homemade products, took on the challenge with a free-thinking approach that transcends conventional ideas. While basing the recipe on the manufacturing method of our winter homemade stollen, they devised a recipe that elevates it to a summer-appropriate flavor. By using tropical fruits and lemon, we've created a light flavor, and through the patissiers' skill, we've achieved a "moist texture even when chilled." This is an "evolved" summer stollen with a "refreshing taste" that sets it apart from the rich flavors of winter, and one that can be "enjoyed chilled" like never before.

A Moist Stollen Featuring the Refreshing Taste of Tropical Fruits and Lemon
The dried fruits mixed into the summer stollen dough are a carefully selected combination of four types that overflow with a summery feel: the tropical sweetness of pineapple and mango, along with orange peel and lemon peel. By lightly soaking these in "Kirschwasser," a fruit brandy made by fermenting, distilling, and aging cherries, we achieve a rich yet light flavor and a gentle aroma. The spices, essential to winter stollen, are deliberately omitted to maximize the refreshing taste of lemon and tropical fruits.
The key to the flavor is our "Homemade Lemon Marzipan," a combination of traditional German marzipan (almonds and sugar kneaded together) with Setouchi lemon juice. Almond flavor is enhanced with lemon, creating a refreshing and sweet-sour marzipan that serves as an accent to the overall taste.
Generally, baked goods tend to become hard when chilled. However, this product has been evolved by increasing the proportion of milk and butter in the dough compared to our winter homemade stollen, and by incorporating coconut puree, ensuring a moist and soft texture even when chilled.
While evolving the recipe and ingredients for summer, we have retained the charm unique to our homemade stollen. To ensure that the marzipan can be enjoyed uniformly with every slice, the homemade lemon marzipan, shaped into a bar, is carefully enclosed by hand from one end of the dough to the other. "Seijo Ishii Central Kitchen" is our in-house production facility that began operations in 1996. By handling everything from planning and development to manufacturing of our own deli, dessert, and bread products, we deliver delicious products with stable quality while cutting unnecessary costs.
