■ Nagahama Roman Beer
Founded in 1996 in Nagahama, Shiga Prefecture, Nagahama Roman Beer will celebrate its 30th anniversary in 2026. Blessed by the rich nature nurtured by the meltwater of Mount Ibuki, our brewery-restaurant is nestled in the historically charming streets of Nagahama. Since our founding, we have cherished the taste of our classic beers, beloved by customers inside and outside the prefecture, while continuously challenging ourselves to brew new limited edition beers.
■ Cantina Arco
Cantina Arco is a highly popular Italian restaurant located on Takoyakushi-dori Fuyacho in Kyoto. Owner Shimizu, who developed an interest in cooking from a young age and trained in Sorrento, Southern Italy, opened the restaurant with the desire to "share the wonders of Italy with many people." They offer original and beautiful dishes using carefully selected ingredients and an extensive list of Italian wines. The restaurant has garnered significant attention, frequently featured in TV programs and magazines. It is a local favorite, where the owner's passion for guests to relax, enjoy food, and conversation in a casual setting is palpable.
■ This year marks the 4th collaboration beer
The first collaboration was a Pilsner type that maintained the dignity of beer while adding a hint of lemon peel within the scope of auxiliary ingredients, allowing for a subtle lemon aroma. The subsequent second release, by changing to a low-malt beer specification, significantly increased the amount of lemon peel used, achieving an even richer lemon flavor. Last year's third release incorporated lemon juice, further enhancing the fresh aroma that spreads the moment it touches your palate, making the taste more distinctly lemon-like. With each iteration, we have accumulated expertise in leveraging the characteristics of lemons. For this fourth installment, brewing began a month earlier in April compared to the previous year. Unlike the mature lemons used previously, this time we are using early-picked, fresh lemons. The refreshing lemon flavor from these early picks is a perfect match for the upcoming hot season.
■ Commitment to Brewing
Setouchi Lemon Pilsner is born from an uncompromising commitment to ingredients. We use freshly picked Setouchi lemons, lovingly cultivated by "citrusfarms Tatemichi-ya" on Ikuchijima, Hiroshima Prefecture, a place Owner Shimizu fell in love with, and these lemons are delicious enough to be eaten raw. Each lemon is carefully hand-processed, extracting all of its juicy pulp and the refreshing, aromatic peel that makes one close their eyes in delight with a single taste. To maximize the fresh aroma and flavor of raw lemons, we meticulously planned every detail, including timing, methods of use, and temperature management. To achieve the perfect balance, members from Cantina Arco and Nagahama Roman Beer conducted numerous tastings. While ensuring the strong presence of lemon, we also refined the beer's overall quality, determining the optimal ratio of lemon juice to beer. Please enjoy this meticulously crafted bottle.

■ Comment from Head Brewer Futo Okumura
For this fourth installment, we once again carefully processed over 300kg of Setouchi lemons, luxuriantly infusing both their juice and peel into the beer. By starting the brewing process a month earlier than last year, we can now enjoy a more distinct "bittersweet and refreshing tartness of Setouchi lemons" this year. The base Pilsner-type beer is infused with carefully prepared lemon peel, adding a fresh aroma and pleasant bitterness. Furthermore, the addition of lemon juice brings a refreshing and sharp acidity derived from the citric acid in the lemons. Hops are kept subtle to ensure that the gentle sweetness from the malt and the unique character of the lemon harmonize in perfect balance. We recommend pairing it with Southern Italian cuisine, such as dishes served at Cantina Arco. Please enjoy this lemon beer, evoking the cheerful sun, to your heart's content.
