Shunpanro Co., Ltd. operates 'Shimonoseki Shunpanro Abeno Store' (located in Abeno-ku, Osaka; Store Manager: Kenji Shimazu), a specialty restaurant for fugu and seasonal cuisine. Starting in July, as summer fully arrives, the store will launch a new limited-time 'Summer Course' featuring premium seasonal 'Hamo' (pike conger), available until Monday, August 31, 2026.

The Artisan Craft Behind Osaka's Summer Tradition: 'Hamo'

'Hamo' has long supported Osaka's summer food culture. As July brings intense heat, the fish develops richer umami and a refined sweetness.

Hamo contains countless fine, hard small bones, making expert culinary skills essential for safe and delicious preparation. Our chefs perform a meticulous traditional technique called 'honekiri' (bone-cutting), making over 24 precise knife cuts within one inch (approx. 3 cm), leaving only a thin layer of skin.

We present luxurious summer flavors to be enjoyed with all five senses, including 'Hamo chirinabe'—plump and artistically shaped by briefly boiling—and 'sukinabe' served in a golden special broth, all crafted with the refined techniques passed down by the long-established Shunpanro.

Located on the 14th floor of the Kintetsu Main Store Tower at 'Abeno Harukas,' the Abeno Store is a specialty restaurant where guests in Osaka can enjoy the traditional flavors and techniques of the Shimonoseki Shunpanro main store.

4. Overview of Shimonoseki Shunpanro Main Store

Shunpanro was named in 1888 by Itō Hirobumi, Japan’s first Prime Minister, and was recognized as Japan’s first licensed fugu restaurant.

In 1958 and 1963, it had the honor of hosting Emperor and Empress Showa, and continues to be loved by many guests as Shimonoseki’s premier hospitality venue.

Perched on a hilltop overlooking the Kanmon Strait—the historic site of the Genpei War and Meiji Restoration—the main store offers guests spectacular views of the strait and its famous fugu cuisine, both shaped by history.
