This pork is raised on a diet rich in high-quality barley, resulting in a clean taste with minimal off-flavors and a firm, fine-textured meat quality. Because the pork is raised on barley, it has a higher melting point for its fat, preventing a greasy mouthfeel and offering a smooth, refined sweetness. Its quality is globally recognized, having received the highest "three-star" rating from the International Taste Institute. At Tonkatsu Kagurazaka Sakura, each piece is breaded upon order and deep-fried slowly at a low temperature to ensure a thick-cut, tender, and juicy result. The restaurant uses 100% plant-based oil containing unsaturated fatty acids and carefully selects rice and cabbage to complement the tonkatsu. Diners are encouraged to start with rock salt to appreciate the natural flavor of the meat before using the provided sweet or spicy sauces.
