At 'KŌSA,' which follows a farm-to-table concept, dishes include conger eel fritters and gazpacho made with cucumbers from the 400-year-old Higuchi Farm in Takagamine. 'Mr. Maurice’s Italian & Rooftop Bar,' supervised by renowned Italian chef Marc Vetri, offers appetizers featuring Manganji peppers and cucumbers with a sweet-and-salty corn puree bagna cauda, peperonata with hidden hints of apple, honey, and prosciutto, and a new style of white peach shaved ice. At 'PIOPIKO,' supervised by top US chef Wes Avila, guests can enjoy original Mexican-American dishes with a Japanese twist, such as eel and egg tacos inspired by 'umaki,' and a summer vegetable salad with white miso and white balsamic dressing, alongside twisted cocktails featuring smoky, fruity, and spicy notes.
