As March begins, we are gradually starting to feel the warm spring sunshine.

In line with the changing seasons, Okuyugawara Onsen Tsubaki has renewed its menu to a spring offering full of seasonal delicacies, starting from Sunday, March 1st.

2026 Spring Menu: Serving Image

The theme of our spring menu is "Snow Melts, Spring Mountains Bud in Okuyugawara."

This expresses the vibrant scenery of the mountains where flowers and trees have begun to sprout with the warmth of spring.

Please enjoy the spring of Okuyugawara with all five senses,

and delight your eyes with seasonal ingredients and tableware tailored to the season.

2026 Spring Menu: Aperitif

The meal begins with an aperitif, "Harugasumi" (Spring Haze).

With the gentle aroma of cherry liqueur layered with the richness of white rum, and a refreshing acidity from lemon juice, it achieves a light and balanced flavor. The soft sweetness and subtle tartness harmonize, creating a seasonal moment with its beautiful pale cherry blossom color.

2026 Spring Menu: Appetizer

The appetizer is a visually delightful "Seven Appetizers Served in Various Dishes."

The tempura in the center uses kuruma prawns, characterized by their delicate sweetness and elegant umami, lightly fried in a crispy batter. Served with seasonal butterbur sprouts, you can enjoy the spring-like bitterness and sense of the season.

When eating, please add matcha salt to your liking and enjoy the flavors of the ingredients while they are warm.

⑦ Spinach Castella with Cream Cheese

Hirokko is a traditional vegetable from Akita Prefecture, referring to young chives.

It is said to promote blood circulation and relieve fatigue in early spring.

2026 Spring Menu: Steamed Dish

The steamed dish is "Sakura Leaf Wrapped Domyo-ji, Cherry Salmon (Hokkaido), Leaf Burdock."

This is a spring-like dish featuring Hokkaido cherry salmon, available only at this time of year,

and leaf burdock, a vegetable that heralds spring.

Please enjoy it with the sauce.

2026 Spring Menu: Main Dish

The chef's proud main dish is "Kuroge Wagyu Tataki, Spring Vegetable and Wild Edible Plant Hot Pot with White Miso."

This is a seasonal hot pot dish featuring a rich broth based on white miso, generously filled with seasonal vegetables and wild edible plants such as spring cabbage, rapeseed flowers, and kogomi.

You can also enjoy variations in flavor with the chef's special karashi fuki miso (mustard butterbur miso) and the specially blended Gomi Togarashi (five-spice chili pepper) from the long-established "Asakusa Yagenbori."

The Kuroge Wagyu tataki can be enjoyed as is, or wrapped around vegetables, as you prefer. Blood orange pepper and three-year-aged wild garlic soy sauce add further depth to the flavor.

2026 Spring Menu: Dessert

Concluding the meal is our "Homemade Dessert."

For dessert, we offer the chef's original Gateau Chocolat. Unlike typical versions, it contains a subtly cherry-flavored cherry bean paste, creating an elegant and profound taste.

For the order of enjoyment, please start with the central Matcha Bavarois, followed by the Gateau Chocolat on the left, and finally the refreshing Dekopon and Hyuganatsu Sherbet on the right. The refreshing acidity of the Hyuganatsu sherbet and Dekopon provides a clean finish.

In addition, we offer a variety of other dishes that evoke the charm of spring using seasonal ingredients,

and "pairings" tailored to the dishes.
