The 'Layered Parfait,' which changes its theme seasonally, is inspired this time by the sophisticated food culture of Rome since the 1960s and the 'aperitivo' culture. It is designed to be enjoyed as both a dessert and a light meal. The stars of the dish are fresh, juicy summer melon and savory prosciutto. Layers of mascarpone, yogurt, pistachio, tomato, basil, and lime create a refreshing yet rich flavor profile. The melon jelly and pulp add sweetness, while the mascarpone mousse and pistachio ganache provide a smooth, creamy texture.
