For the appetizer, we offer seasonal conger eel that delicately expresses the taste of the season. The eel is wrapped in fragrantly roasted eggplant to form a roll and paired with a paprika coulis. Complemented by a refreshing cucumber sorbet, this light dish is enhanced by the fresh aroma of lemon. For the pasta, enjoy a Pescatore, rich with the umami of seafood, served with jade-colored tagliatelle. Made Bianco-style with layers of umami from Toyama Bay white shrimp, mussels, and clams, the rich sweetness and depth of the white shrimp gently unfold. The fish dish is seasonal grouper, steamed to perfection and finished with an original sauce—a French-style arrangement of fragrant scallion oil and special XO sauce. As a palate cleanser, we offer a plum sorbet, adding a light accent to the course with a refreshing aftertaste.
