Nanaha Co., Ltd. (Head office: Meguro-ku, Tokyo; Representative Director: Kazuhiro Kuchiami), which operates the global cafe brand "nana's green tea" themed on matcha and Japanese tea, will begin selling the early summer limited food menu "Azumino Salmon and Avocado Donburi" at its stores nationwide from April 7 (Tuesday). This menu features "Azumino Salmon," raised by "Fujiya Wasabi Farm" in Azumino City, Nagano Prefecture, using spring water from the Northern Alps. This is the first attempt by a restaurant chain to offer a menu item using this salmon (※)

Azumino Salmon and Avocado Donburi

This is an early summer limited donburi (rice bowl) featuring "Azumino Salmon," raised in Azumino City, Nagano Prefecture, where clear spring water from the Northern Alps flows.

The salmon, characterized by its elegant fat and soft texture, is combined with creamy avocado, okra, tomato, cucumber, and stem wakame seaweed. The special sauce, made with in-house prepared fresh soy sauce koji, enhances the umami and depth of flavor.

Stem wasabi, free-range egg mayonnaise, and lemon are served separately.

First, enjoy the natural taste of the ingredients, then add lemon for a refreshing touch, stem wasabi for a cool sensation, and further combine stem wasabi with mayonnaise for a mellow spiciness, enjoying the change in flavors.

Background of Introduction

The melted snow from the Northern Alps emerges as clear spring water in Azumino City, Nagano Prefecture, after 20-30 years. At nana's green tea, the "stem wasabi" offered on the grand menu uses wasabi from Fujiya Wasabi Farm, which is grown with Azumino's spring water.

This natural spring water is rich in oxygen, flows continuously 365 days a year, and maintains a constant water temperature, creating a stable growth environment suitable for fish farming.

The same farm also cultivates salmon using this spring water.

"Azumino Salmon" raised in this environment is characterized by its elegant fat without any fishy odor and a soft texture.

We were impressed by the elegant taste and the fact that it is a domestic ingredient consistent with nana's green tea's concept, leading us to be the first restaurant chain to adopt it.

About Fujiya Wasabi Farm

Fujiya Wasabi Farm is a wasabi farm founded in 1936 (Showa 11). It cultivates wasabi in Azumino City, Nagano Prefecture, using spring water from the Northern Alps.

Utilizing the abundant spring water of Azumino, the farm began salmon farming by repurposing a closed trout farming facility. Azumino Salmon began shipping in 2024.

Since the spring water itself is rich in oxygen, there is no need to use oxygen supply equipment typically required for aquaculture. Furthermore, as the water constantly circulates, aquaculture without relying on water quality management devices is possible.

This aquaculture method, which leverages the natural environment, is a sustainable approach that does not depend on equipment and utilizes Azumino's rich water environment.

By engaging in salmon farming in addition to wasabi cultivation, the farm has expanded its sales channels and contributed to regional revitalization.

●Tuna: Wild tuna from Nachikatsuura Port, Wakayama Prefecture. Tuna caught by longline fishing is ikejime (brain-spiked) and delivered to stores nationwide with the highest quality using a special freezing method that does not impair its taste, quality, or texture.
