The Tokyo EDITION, Ginza will relaunch its 14th-floor restaurant, "Sophie at EDITION," under a new concept starting June 3, 2026. Located on the top floor with panoramic views of Ginza, the restaurant will offer classic Italian cuisine in a sophisticated urban trattoria style. Led by Executive Chef Marco Violano from Puglia and Executive Sous Chef Toru Hirakawa from Hokkaido, the menu showcases the fusion of Italian culinary essence and Japan's rich food culture. Guests can enjoy a variety of dishes, including signature daily-made pasta, alongside an extensive selection of Italian wines and classic cocktails.
