On February 14, 2026, Ms. Hitomi Kawasaki, originally from Sendai City, Miyagi Prefecture, opened a stone-baked pizza food truck named 'chako kitchen' in Tamura City, Fukushima Prefecture!

Ms. Kawasaki participated in the "Kitchen Car Opening Seminar" held in Sendai City, Miyagi Prefecture in March 2025, organized by Regale Co., Ltd. (Headquarters: 1995 Shimo-Okamoto-cho, Utsunomiya City, Tochigi Prefecture, Representative Director: Shingo Usui, hereinafter referred to as "Regale"), and subsequently proceeded with preparations for opening with Regale's support. Furthermore, she started her new venture by relocating alone to Tamura City, Fukushima Prefecture, utilizing the "Fukushima Prefecture 12 Municipalities Entrepreneurship Support Fund". This marks a new challenge in a new environment.

The Spark for Opening a Food Truck - A Housewife's Challenge Driven by Her Love for Cooking - Ms. Kawasaki previously worked part-time as a registered seller at a pharmacy. She has always loved cooking and found joy in hearing people say her food was "delicious," and had always wanted to work in a field related to food.

With her children grown, she wanted to fulfill her ambitions in the next chapter of her life. The initial spark came when she made her specialty curry for her elder sister, who commented, "It's so delicious, why don't you start a curry food truck?" Ms. Kawasaki, who is active and enjoys moving to various places, felt that a food truck was a perfect fit for her after researching them, and immediately began gathering information.

She found Regale's kitchen car opening seminar and participated. At the time, she was still planning to start a curry food truck, but through the pizza-making experience and tasting at the seminar, her desire shifted to wanting to open a pizza food truck! From then on, she proceeded with funding preparations and pizza technique training.

Regale provided comprehensive support for her opening, from vehicle manufacturing to pizza cooking techniques and on-site training. Throughout this process, Ms. Kawasaki's personality, positive attitude, and agility were evident. We learned a great deal from her during the opening preparation period.
