Kogure Kentaro Seminar from the Faculty of Policy Studies, Kyorin University, collaborated with the Western confectionery shop "U-ono Mori" in Mitaka to develop and sell "Kyorin Apple Cookies" (Kyoringo Cookie), which include semi-dried apricots and apples, as well as Mitaka-grown Amanatsu citrus peel. A seminar student involved in this product development said, "We wanted to give shape to and disseminate the charm of Mitaka, our place of learning, with our own hands. That's how Kyorin Apple Cookies were born. We were in charge of the box design, using apricots and apples as motifs to create an appealing look that makes people want to pick it up. We paid close attention to every detail, even inside the box, incorporating ingenuity so that it can be enjoyed from the moment it's opened. The process of giving shape to an idea was by no means easy, but after repeated trial and error, we were able to complete it as a unique and special product." This initiative was carried out as part of the practical learning within the Kogure Seminar, where students were involved in product concept and plating ideas with the cooperation of Café Ichifuji.
A seminar student commented, "In this project, what left a strong impression on us was the various trials and errors made by the cafe staff. In particular, their adjustments and detailed工夫 (ingenuity) for actual service were very educational. Also, we focused on making fruits the main star and strove not to diminish their quality. Regarding the plating, we carefully considered balance and arrangement so that each fruit stands out while maintaining a gorgeous appearance. We would be delighted if you would try it."
