The answer I arrived at was very simple.

We moved our manufacturing base from Saitama to Minamiaiki Village, Nagano Prefecture. This is the beginning of the second chapter of amazake making.

This is a place surrounded by mountains over 1000m high, where clear water flows, and the changing seasons are clearly felt.
The temperature difference between morning and night, pure water, clear air. Each of these changes the expression of koji.
Fermentation is not something that can be completely controlled. That's why I realized that the environment of this place itself becomes the taste.
And after living in this village, I felt the richness of the "space" in everyday life.
Time to do nothing. Time to heal myself today.
Time to simply enjoy "now."
In today's fast-paced, information-saturated life, such time is becoming increasingly scarce.

As the second chapter began, we re-examined the meaning of continuing our koji shop.
Many people still have the impression that rice koji and fermented foods are "good for the body but difficult" or "somehow unclear."
However, koji was originally a much more familiar presence.
It should have been something that naturally blended into daily life without special knowledge.

We want to be a presence that gently encourages those who are trying koji for the first time, so that they can regain that feeling.
We want people to easily and enjoyably learn about and feel close to Japanese fermentation culture through koji.
The slogan "Let's ferment!" also embodies this meaning.
Just as fermentation progresses over time.
We, living in this busy modern age, also need time to slowly face ourselves.
We hope that "Let's ferment!" will be a gentle word directed at oneself.
We want to continue making our products carefully so that they can accompany you during those moments of relaxation.
