Fitting for the month of April, which marks the start of new beginnings, this is a luxurious ramen featuring domestic sea bream—a 'celebratory' (medetai) ingredient—combined with shrimp wontons.

A supreme soup of red sea bream and chicken bone broth. A bowl that captures the essence of spring. This dish features a salt-based soup that layers the richness of chicken bone broth onto a stock carefully extracted from domestic red sea bream. A special salt sauce made with Okinawa's 'Shimamasu' salt is used to bring out the delicate umami of the sea bream to its fullest.

Furthermore, the addition of yuzu paste suppresses the fish's characteristic odor, resulting in a clean aftertaste. With every bite, the elegant umami of the sea bream and the refreshing aroma of yuzu spread through the palate.
