JR Kyushu Hotels & Resorts Co., Ltd. Students analyzed over 3,000 reviews from four competing hotels and compiled new breakfast menu proposals and strategies to enhance guest experience, targeting the rapidly increasing number of travelers from Asian regions.

In this project, based on student-led research and analysis, the hotel undertook a refresh of its breakfast menu to reflect real guest feedback. While maintaining the existing concept of 'health, local production for local consumption, and vegetables,' students proposed improvements focused on enhancing the experiential value of 'enjoying the morning of your journey.' In response, the restaurant operator developed a signature new menu item: the 'Customizable Cellophane Noodles.' By allowing guests to freely select ingredients and seasonings, and serving freshly prepared dishes from a live kitchen, the design emphasizes a 'see, choose, savor' experience, enriching the breakfast time itself.

Additionally, careful attention was paid to presentation, pursuing visual appeal and photo-worthiness with colorful, vegetable-focused arrangements that balance health-consciousness with satisfaction. Furthermore, with overseas guests—particularly from Asian regions—in mind, the hotel enhanced its service for inbound travelers by implementing clear dish names, English labeling, intuitive signage design, and improved restaurant flow.

Meanwhile, as inbound tourism demand rapidly increases, meeting the expectations of guests from diverse cultural backgrounds has become a more critical challenge than ever. Analyzing Over 3,000 Guest Reviews: A Six-Month Data-Driven Initiative
