We developed this product with the desire to add a spring-like seasonal feel to the popular "Crispy Umashio Chicken," which is a limited-time spring menu item.

"Lemon-Scented Crispy Umashio Chicken" was completed over approximately one year, based on the concept of "chicken that can be enjoyed refreshingly." We particularly focused on the lemon flavor, which is the key to the taste. Initially, we considered a more "adult-oriented" flavor with stronger bitterness, but we aimed for a lighter, fresher taste so that a wider range of customers could enjoy it.

On the other hand, we struggled to bring out the natural aroma of lemon. We adopted lemon peel and, through repeated trials, carefully adjusted the balance with freshness to add depth to the flavor.
