After honing his skills at the three-Michelin-starred restaurant "Guy Savoy Paris" and its sister restaurant "Le Ciberta" in Paris, Fumiaki Kanai served as pastry chef at "Benoît" in Aoyama and "UN GRAIN" upon returning to Japan. In 2020, he opened his own patisserie "INFINI" in Kaminoge, Tokyo, continuing to fascinate global celebrities and sophisticated gourmets with his exquisite desserts. Mr. Kanai, who is particular about "savoring aromas" and creating memorable desserts, encountered domestically grown bergamot from Kochi and began exploring the charm of rich local ingredients, which led to the collaboration with Inoue Seikouen.
