'KANADE' is a new standard dinner course for Hotel Kanazawa, conceptually aimed at maximizing the natural deliciousness of seasonal ingredients using French techniques and creating beautiful harmony on the plate. The menu is renewed according to the changing seasons, allowing guests to experience the rich nature of Ishikawa through the ingredients that shine the most during that period.

The summer menu starts with an amuse-bouche of sardine and matcha tart, followed by a poached scallop with passion fruit and refreshing mint oil, and a cold potato soup with the hidden flavor of grilled eggplant. For the main dish, guests can choose from three luxurious options: grilled Noto pork, sea bream with a breze sauce infused with fish sauce, and wagyu poached in summer vegetables (optional). The course concludes with a terrine of two citrus fruits and tea ice cream, completing a seven-course journey through Kanazawa's summer with all five senses.

Communicating the 'Charm of Ishikawa's Summer' Through Food Nationwide

The ingredients nurtured by Ishikawa's rich nature show different expressions with each season. The new course 'KANADE,' which has been offered since this spring, has been reborn as a 'Summer Menu' that weaves the story of the four seasons.

Through this course, we aim to achieve 'activation of the regional economy through food' and 'providing new emotional experiences for tourists and local customers.' Amid growing interest in local consumption, we lavishly use local ingredients such as branded meat 'Noto Pork' and 'Sea Bream,' which are in season in the summer.
