The essential cake base uses a unique, time-honored method perfected over decades, achieving a crisp exterior and a soft, airy interior. The name 'White Night (WHITE NIGHT)' refers to the natural phenomenon in high-latitude regions during summer, where the sky never fully darkens at night. Hokkaido's summer, with its earlier dawns compared to Honshu, sees the sky brightening from early morning between June and July. The 'White Night' buche captures this uniquely northern summer scene—bathed in soft light—through its fluffy texture and gentle flavor.
