On top of this uniquely flavored meat, you'll find moist inside, crispy outside rosti potatoes and a poached egg, all served with a rich béarnaise sauce.

The chef's recommended "Smoked Brisket Burger" features Wagyu brisket slow-cooked at a low temperature for over 10 hours in a smoker, infused with the rich aroma of cherry wood, and then carefully rested while maintaining its temperature, resulting in an incredibly moist and juicy finish. The melt-in-your-mouth brisket is sandwiched in a potato brioche bun, with spicy sriracha aioli adding an addictive flavor.

Finley Semes, Head Chef of Metropolitan Grill

Born in Hawaii, Semes obtained his chef's qualification at Kapiolani Community College at the age of 19, and then trained for 10 years at various restaurants on Oahu, including the Michelin one-star restaurant M by Chef Mavro. Semes truly awakened to the depth and joy of cooking when he came to Japan in 2009. Inspired greatly by Matthew Crabbe, Semes honed his skills and gained further knowledge and experience in grill cuisine at Two Rooms Bar & Grill and Ruby Jack's before joining Hilton Tokyo in 2017. As a key staff member of Metropolitan Grill, he supported successive executive chefs and was active in catering for international sports events. Semes says, "I want to deepen the flavor of ingredients and stimulate guests' taste buds through grilling techniques tailored to the ingredients, utilizing various cooking methods of the grill – smoking, flaming, rotisserie, torch, and exquisite heat control using embers and ash."
