Founded in Zentsuji City, Kagawa Prefecture in 1936, it is currently run by the 4th generation.
The origin of the shop name comes from Yashima, located in the northeast of Takamatsu City, Kagawa Prefecture.
Our udon noodles are all handmade without using machines, and the flour is a combination of domestic wheat, including that from Kagawa Prefecture. The soy sauce is also Kamada Soy Sauce from Kagawa.
The broth is made from carefully selected ingredients from all over the country, such as Ibuki iriko (dried sardines), Sota katsuobushi (bonito flakes), hana katsuobushi (shredded bonito flakes), true kombu (kelp), and shiitake mushrooms.
It takes approximately three days from making the flour into udon noodles until they are served.
Since we boil the udon after receiving your order, it takes some time to serve.
