"Ashigaru Onigiri Kanazawa," our second store following the one in Toyama, will launch for a limited time from 7:00 AM to 12:00 PM, centered around the "beautiful 120-year-old yakiniku counter steeped in history" of Yakiniku House Shogun Kanazawa.
Its most distinctive feature is the unique style of being the "world's first onigiri stand where you can grill meat." For a while after opening, it will operate as a luxurious space with "only 8 counter seats."
We propose an unprecedentedly special breakfast experience: savoring the finest onigiri at the counter right in front of you, steeped in history.
Commitment to Rice and Cooking Method: "Horai Mai" from Mt. Hakusan, Cooked in an Exquisite Hagama
The rice used at the Kanazawa store is not Toyama rice, but locally produced Ishikawa Prefecture "Horai Mai (Hōraimai)." This rice, grown with the pure snowmelt water of Mt. Hakusan, one of Japan's three famous mountains (abundant water from the Tedori River alluvial fan), has a strong sweetness and umami flavor accumulated within the grains due to the "severe temperature differences between morning and night" characteristic of mountainous regions. It features a safe and secure cultivation method using organic fertilizers such as rice husk compost, minimizing pesticide use.
By cooking this exquisite Horai Mai all at once in a "hagama" with high heat conductivity, it results in the finest rice with distinct grains, fluffy texture, and enhanced natural sweetness.

All set meals include freshly cooked hagama rice onigiri, with your choice of up to three fillings.
First, to directly enjoy the umami of the rice and the nutrient-rich "Miyagi Prefecture nori" with its significant tidal differences, you will start with a "Shio Onigiri" (Salt Onigiri), embodying the beauty of subtraction. The crisp nori and the melt-in-your-mouth softness of the rice are irresistibly addictive.
The nori is a new nori of the highest grade, purchased at the first market of Miyagi Prefecture, boasting over 100 years of history and known as one of the world's three major fishing grounds. Blessed by the cold seas of Miyagi Prefecture and the rich nutrients of the Sanriku coast, it is called "Kanryu Nori" (cold current nori).

You can enjoy pickles made with seasonal Kaga vegetables, a delicious soup with a rich dashi broth, and "Sonogi Matcha (Kihoku Matcha)" made in Higisonogi Town, Higisonogi District, Nagasaki Prefecture.
"Sonogi Matcha (Kihoku Matcha)" is based on "Sonogi Tea," a brand tea that has won the national tea competition multiple times, blended with the vibrant green "Tsuyuhikari" and the deeply rich "Asahikari." It is a mellow and rich matcha with suppressed bitterness and a gentle sweetness, with little bitterness or astringency.
The natural elegant sweetness of this tea creates the perfect pairing, harmonizing exquisitely with the umami of the onigiri rice and the flavor of the nori, enhancing each other's deliciousness.

Born in 1987 in Toyama City, Toyama Prefecture. As the second-generation owner of "Yakiniku House Shogun," a wagyu yakiniku specialty restaurant founded in 1987, he serves as the President and CEO of Ganesha Inc. With the mission of "EAT IS LIFE," he operates stores domestically and internationally, based in Toyama and Kanazawa. In 2022, he produced "Yakiniku Gyu-miya" owned by Hiroyuki Miyasako, which garnered attention. He excels at creative store development that transcends brand boundaries, and in addition to yakiniku, he continuously creates new business formats in diverse food genres such as sushi, Italian, and hamburgers. Guided by the principle of "Energizing communities through food," he pursues a way of dining that fosters local culture and continues to challenge himself from the Hokuriku region to the rest of Japan and the world.
