This year’s highlight is 'locally grilled unagi' (jigaki unagi), a traditional Kansai-style preparation where fresh eel is grilled over fire without steaming, locking in rich flavor and creating a crispy exterior with a tender, fluffy interior. The 'Unagi-drenched Tororo Kappa Maki' features a simple cucumber roll generously topped with jigaki unagi, allowing customers to generously drizzle fresh tororo (grated yam) on top themselves.
