"Nakasu Kawabata Kirin," which hangs its noren in the Hakata, Kawabata-dori shopping street, is a highly-regarded establishment with unique innovations that deviate from tradition, gaining immense support from local customers. Its signature dish is the "namename soup" filled to the brim of the bowl, with the meticulously simmered tonkotsu broth concentrated to achieve a powerful richness and a surprisingly clean finish.
