ESPACIO NAGOYA CASTLE, located at 3-19 Hinokuchi-cho, Nishi-ku, Nagoya, Aichi Prefecture, opened on October 1, 2025, with the concept of becoming "an art museum hotel to boast to the world." Its French restaurant Brillance will start selling "Gâteau au Comté," a signature cheesecake from Quintessence, on April 14, 2026, at 10:00 AM. This product, developed by Chef Shuzo Kishida, was previously only available through a lottery system on Quintessence's official online store. It will now be available for reservation at Brillance and THE SHOP on the 1st floor of ESPACIO NAGOYA CASTLE. The cheesecake is priced at 5,400 JPY (tax included). It is crafted with rare 36-month aged Comté cheese, featuring a three-layer structure: a nutty tart base, a tangy rare cheesecake layer, and a rich baked cheesecake layer. The development focused on resolving six common cheesecake issues: flavor monotony, weak cheese presence, egg odor, heavy aftertaste, poor texture, and soggy tart crust. The product uses no spices or fruits, focusing on a savory cheese flavor. The layered structure provides a progressive taste experience from savory to rich to refreshing. This technique of "gradual change based on taste specific gravity" is adapted from Quintessence's culinary approach. The hotel also announced the appointment of Shota Takase as Brillance Chef and Takeshi Matsumoto as Brillance Chef Patissier, both having trained at Quintessence and prestigious French restaurants. ESPACIO NAGOYA CASTLE is the third ESPACIO brand hotel by Kowa Co., Ltd., following Hawaii and Hakone. The ESPACIO THE JEWEL OF WAIKIKI in Hawaii has received a 5-star rating from Forbes Travel Guide for five consecutive years since 2022. ESPACIO Hakone Geihinkan Rinfukikuryu opened in Hakone in July 2024, and The Spa ESPACIO MEIKAN opened on October 13, 2025, as an ancillary facility to Nagoya Kanko Hotel.
