We use exceptionally fresh yellowfin tuna selected by "Yonekawa Suisan," a long-established wholesale fish dealer at Toyosu Market celebrating its 90th anniversary. This satisfying dish includes four preparations: sashimi, marinated, nut-dressed, and tekkamaki.

Kikusui Shuzo's "Kikusui Ryofu Honjozo" (140ml, 800 yen), made with yeast that produces a lot of malic acid, has a good balance of acidity and sweetness that enhances the sweetness of the "Live Octopus."
