Daisyo Corporation (Ota-ku, Tokyo / President: Ryoju Taira) will offer a total of nine limited-time "Seasonal Menu" items in April at 23 branches of its seafood izakaya, "Daisyo Suisan," which is famous for its hamayaki (beachside grill), sashimi, and sushi made with seafood delivered from fishing grounds nationwide (excluding some stores). From Hatsu Katsuo (first bonito) and sakura shrimp to anago (conger eel) and beltfish, skilled artisans, who are experts in fish, prepare the ocean's bounty unique to this period from spring to early summer, creating dishes that allow the straightforward taste of the ingredients to shine. In recent years, it has become increasingly difficult to feel the change of seasons due to global warming and other factors. Daisyo Suisan continues to convey the message, "Precisely because of such times, we want people to truly savor the authentic deliciousness of the season."

A Bounty of Deliciousness! Daisyo Suisan's Spring Seasonal Menu

For the April seasonal menu, this is the first thing you should try: "Hatsu Katsuo (Sashimi, Tataki, Sushi Set)" (1,200 yen). Hatsu Katsuo, which travels northward on the Kuroshio Current from spring to early summer, is expertly selected by "Yonekawa Suisan," a long-established wholesale intermediary at Toyosu Market celebrating its 90th anniversary, and delivered whole directly to the stores. Artisans, who deeply understand fish, prepare the exceptionally fresh bonito as sashimi, tataki (seared), and sushi. This is a great value dish where you can enjoy three different flavors at once.

For the beginning of the season, anago is available. They offer a whole "Anago Sushi" (1,000 yen). The simmered anago, finished with a special sauce, is characterized by its plump texture and elegant sweetness. The moderately seasoned sushi rice blends exquisitely, spreading a rich umami flavor.
