This menu item features "Azumino Salmon," raised in the pristine spring water of the Northern Alps by the "Fujiya Wasabi Farm" in Azumino City, Nagano Prefecture. This is the first time a restaurant chain has developed a menu using this specific salmon (*).

[Introduction Background]

The snowmelt from the Northern Alps flows underground for 20 to 30 years before emerging as clear, pure water in Azumino City, Nagano Prefecture. At nana's green tea, we already use wasabi from the Fujiya Wasabi Farm, grown in this Azumino spring water, for the "stem wasabi" served in our grand menu.

This natural spring water is rich in oxygen, flows continuously 365 days a year, and maintains a constant temperature, creating a stable environment ideal for fish farming.

The farm also utilizes this spring water to raise salmon.

"Azumino Salmon" raised in this environment is characterized by its elegant fat content, lack of fishy odor, and soft texture.

Because it is a domestic ingredient that aligns with the concept of nana's green tea, and because we were deeply impressed by the elegance of its flavor, we have decided to adopt it, making us the first restaurant chain to do so.
