Thank you. Kagerou isn't disappearing yet.
Since our opening, over 19,000 customers have visited us, with weekends almost fully booked and repeat reservations continuing daily.
Encouraged by everyone's support, we have decided to open our counter for the first half of July as well.
What is the Sushi Kagerou Project?
It is named "Kagerou" (mayfly) because it appears and disappears for a limited time, like a mayfly.
It is also named after the heat haze (kagerou) that makes the scenery appear to shimmer, comparing the strong passion of young chefs to it.
This is a practical training project aimed at fostering young sushi chefs, which has been enthusiastically experienced by over 19,000 customers to date.
Supervised by the team behind the authentic Edo-mae sushi restaurant "Sushi Asahi," we offer authentic Edo-mae style sushi using red vinegar rice and seasonal fish directly purchased from Toyosu, at a "price that anyone can easily enjoy."
We are offering the same menu as previous events, with prices further reduced, throughout July. By having our staff directly purchase ingredients at the Toyosu Market in the early morning, we have minimized costs while achieving the highest quality of toppings ever.

Introduction to Roppongi Sushi Muku/Shirogane
An Edo-mae sushi restaurant that has been delighting sushi lovers both domestically and internationally since its opening on November 16, 2022.
As a "sushi restaurant where anyone can easily enjoy good Japanese food anytime," Despite its excellent location within a 1-minute walk from Roppongi Station depending on the exit, We offer a 20-dish course for under ¥10,000.
Therefore, This course itself is also highly recommended for its excellent cost performance.
We also focus on Japanese sake, And offer a SAKE pairing plan to complement the sushi course.
Since the restaurant is spacious, We have an interesting approach of operating in two separate spaces with different interior designs.
Why do we continue this project?
We wanted to support this initiative because we were moved by the "determination of the talents" gathered here.
"I went abroad and there was no real sushi."
"I want to gain a skill and have confidence in myself."
"I just love sushi."
"I want to see people happy with what I've made with my own hands."
Their words were not always pretty, They were filled with regret, anxiety, and a strong will to move forward.
We want to create "a place where such aspirations do not remain just dreams."
Standing at the counter means bearing not only skill but also responsibility and determination.
This project began with the desire to genuinely support their challenge.
And at the same time, We hope to watch and nurture their challenge together with our customers.
We believe that each piece they craft will be a step towards the future.
