It was inspired by the "morning prime time" when fish are most active and the sea begins to shine.
"Ten" means a blessing from heaven. It is added to the store name with the meaning of paying respect to the fish and ingredients.
■ Concept of Gyoten
"Putting the feeling of 'Today is the most delicious' into every single piece of sushi."
The word "Akatsuki" also carries the meaning of "renewing one's feelings every day and pouring everything into today."

Centered on Edo-mae techniques, we carefully prepare seasonal ingredients of the four seasons and offer an OMAKASE course of about 20 items.
The sushi rice (shari) is based on 10-year aged red vinegar, adjusted considering the compatibility with the toppings.
