・Born from the Popular Standard Product "Earl Grey Baum"

The base for "Lemon Tea Baum Mini" is the highly popular "Earl Grey Baum" from atelier Kyo Baum. It is a soft baumkuchen made by generously mixing crushed fragrant Earl Grey tea leaves into a dough using Hokkaido-produced wheat flour and baking it. After its limited release in December 2024, it gained support for its excellent aroma and became a standard product. To allow customers to enjoy this popular flavor more easily and from a new perspective, "Lemon Tea Baum Mini" was developed.

・Challenge of "Harmony" between Lemon and Tea

The biggest challenge in development was balancing the tea and lemon. Lemon has a more distinct taste compared to tea, so depending on how they are combined, it can overpower the delicate aroma of the tea. We repeatedly prototyped the blend of lemon juice used in the fondant (sugar glaze) to find the optimal balance, aiming to evoke a refreshing lemon tea while still appreciating the original aroma of the tea.

When developing the current "Earl Grey Baum," "lemon tea" was one of the flavors we experimented with among many candidates, such as milk tea. We continued development with the desire to complete a flavor by combining different elements, leading to the launch of this "Lemon Tea Baum Mini."

atelier Kyo Baum

Opened in November 2023 in Minami Ward, Kyoto City. It is Kyoto's largest confectionery museum, combining a shop, factory, and cafe, with features that evoke "Kyoto," "matcha," and "baumkuchen" throughout.
