Cooking Class Content
Dashi Tasting
Dashi Tasting
Taste dashi made from kombu, katsuobushi, magurobushi, and the combined 'first dashi' of kombu and katsuobushi. Use your five senses to experience the differences in flavor and umami when tasted individually versus combined.
Learn the scientific reason behind the 'synergistic effect'—why umami becomes exponentially stronger—from professional chefs.
Japanese Cuisine Plating Experience
Japanese Cuisine Plating Experience
Use uniquely shaped dishes to experience the art of intentionally leaving 'empty space' to highlight seasonal colors.
Experience arranging dishes with awareness of the five primary colors of Japanese cuisine (red, yellow, green, black, white) and adding seasonal 'ashi-rai' (garnishes) for a three-dimensional finish. Enjoy beautifully decorating your own kaiseki meal.
During the cooking class, hotel staff will assist with photo-taking. Complete the special worksheet to finish your summer vacation free research project! All children who complete the class will receive a 'Junior Chef Certificate.' To help review at home, each participant will receive a 'katsuobushi and kombu set' to take home, along with the popular 'Kyoto Tsuruya Warabi Mochi' from the gift shop 'Crochet' as a souvenir.
After the cooking class, enjoy a family kaiseki dinner that includes the appetizer you plated yourself.
Gen Uegaki, Head Chef, Japanese Restaurant 'Kyoto Tsuruya'
Japanese cuisine embodies the spirit of respecting seasonal ingredients, the artistry of beautiful presentation, and the hospitality of 'omotenashi.' In this cooking class, I hope participants will not only enjoy the fun of cooking with their hands but also feel the depth and charm of Japanese cuisine. I would be delighted if this experience inspires children to take interest in food and enjoy cooking at home. We sincerely look forward to your participation.
During the Obon season (Saturday, August 8 to Sunday, August 16), we offer the 'Obon Season Family Kaiseki' for dinner. Served on large shared platters, it allows the whole family to enjoy delicious dishes together. This Obon season, spend quality family time at 'Kyoto Tsuruya.'
