Concept "Authentic Chinese, More Freely." While keeping the techniques of authentic Chinese cuisine intact, we are moving towards a style that can be enjoyed more casually and freely. Chinese dishes finished with overwhelming firepower. The lightness of freely choosing from small plates. And a new way to enjoy it by pairing with wine. This is not a conventional Chinese restaurant or a Chinese bar, but the choice of “NEO-CHINESE”.

A Restaurant Born from a Chef's Dream This project started from the idea, "We want to create a brilliant restaurant where members working in the food and beverage industry can give shape to their own aspirations." Under the philosophy of "weaving once-in-a-lifetime encounters," ao Inc. creates restaurants based on the challenges and aspirations of each individual employee. At "Tachinomi Hotaru" in Kanda, which opened this January, we created a space that values closeness with our customers. And "Senron," which is opening now, is a new challenge that further develops that ideology. It was born as a place where Chinese chef Tatsunori Chiba can compete with his own cuisine, based on the experience he has cultivated.

We offer this traditional dish, often served in high-end Chinese restaurants in places like Ginza, in a way that can be enjoyed more freely. After a full 2 days of preparation and then steaming for about 5 hours, it becomes so tender it can be broken apart with chopsticks. The gelatin from the skin and the umami of the fat melt together, creating a rich yet elegant sweetness. This is a symbolic dish of Senron, condensing the technique and effort of authentic Chinese cuisine.
