A restaurant born from a chef's dream
This project started with the idea of "creating a shining restaurant where members working in the food and beverage industry can give shape to their own aspirations."
Under the philosophy of "weaving once-in-a-lifetime encounters," ao Co., Ltd. creates restaurants based on the challenges and aspirations of each and every employee.
"Standing Bar Hotaru" in Kanda, which opened in January this year, realized a space that values close proximity to customers.

A dish that symbolizes Senron is the Imperial Dongpo Pork, made with skin-on pork belly.
This traditional dish, often served in high-end Chinese restaurants in Ginza and elsewhere, is offered in a more freely enjoyable form.
After a full two days of preparation and then approximately five hours of steaming, it becomes so tender that it can be cut with chopsticks.
The gelatin of the skin and the umami of the fat melt together, achieving a rich yet elegant sweetness.
