High-end Modern Korean Restaurant 'SOCHON SYNSENSE'

Gastromix Co., Ltd. (Location: Fukuoka City, Fukuoka Prefecture; Representative Director: Hiroki Horiike) will open a Korean restaurant, 'SOCHON SYNSENSE', at 2-5-29 Heiwa, Minami-ku, Fukuoka City, on Monday, June 15, 2026. It will deliver a new dining experience as a high-end modern Korean restaurant, a genre previously unseen in Fukuoka.

This establishment is a rebranding of 'Nishimura Takahito La cuisine créativité', the only restaurant to receive one Michelin star in the fusion category in the 'Michelin Guide Fukuoka, Saga, Nagasaki 2019'.

Chef Takahito Nishimura, who operates the restaurant, opened 'Nishimura Men Seoul' in 2023, which was selected for the Bib Gourmand in the 2025 and 2026 'Michelin Guide Seoul'. By visiting Korea nearly every month over the past few years to immerse himself in local cuisine and fermentation methods, Chef Nishimura has thoroughly researched Korean cooking, reconfiguring it through fusion with French and Japanese techniques.

'SOCHON SYNSENSE' primarily uses the highest quality ingredients from Kyushu, incorporating elements of Korean cuisine such as white kimchi, homemade seasoning (yangnyeom), samgyetang, and kimbap to provide dishes unique to Chef Nishimura. The restaurant, a renovated traditional Japanese house (kominka), offers a tranquil atmosphere and operates on a reservation-only basis with only three rooms.

Course content: Two courses available at 15,000 yen and 35,000 yen (including tax and service charge). ■ Limited to 2-3 group reservations per day.
