Shine Muscat and Darjeeling Parfait
This is a limited-edition parfait for August, combining seasonal shine muscat with fragrant Darjeeling tea. Focusing on the muscat-like aroma unique to Darjeeling, known as "muscatel flavor," we have expressed a taste that beautifully harmonizes with the fruit's natural freshness.
As you eat from top to bottom, you can enjoy the evolving flavors with the rich aroma of tea and the refreshing taste of fruit layered one after another.
Beginning
A generous amount of fresh shine muscat over rich Darjeeling ice cream. The dense milk aftertaste and the bursting freshness of the fruit fill your mouth. Finished with gold leaf, sugar work, dill, and lemon thyme, it is a visually refreshing dish.
Transition
Darjeeling panna cotta and jelly are hidden inside, layered with lychee and muscat sorbet. The refreshing texture of the sorbet harmonizes pleasantly with the rich aroma of the tea leaves, while berry sauce and crumble add a delightful accent to the taste and texture.
Aftertaste
Elderflower jelly and dill provide a refreshing finish, with a cool aroma spreading throughout your mouth. It overlaps with the rich aroma of Darjeeling, allowing you to enjoy a refreshing aftertaste until the very last spoonful.
