## Pre-opening of Sushi Kyoto Umemori

Umemori Honten Co., Ltd. (Headquarters: Nara City, Nara Prefecture; President: Yasuyuki Umemori), a company that operates a sushi business based in Nara, pre-opened its new specialty Temari-zushi restaurant, 'Sushi Kyoto Umemori,' in the Shijo Horikawa area of Shimogyo-ku, Kyoto, on Friday, May 15, 2026.

Ahead of the grand opening on Saturday, May 30, the restaurant is offering discounted prices to the general public during this period.

## Background of Establishment

Umemori has been delivering sushi products, such as their signature 'Temari Wasabi Leaf Sushi,' to customers nationwide from their base in Nara.

In 2012, their products were selected for JAL domestic first-class in-flight meals. In recent years, they have provided sushi experiences to over 300,000 guests from Japan and abroad through the 'Umemori Sushi School' in Nara and Kyoto.

President Yasuyuki Umemori's belief, 'Eating is hope for tomorrow. Delicious food makes people smile, brings people together, and contributes to world peace,' led the company to open this new flagship store in Kyoto, the heart of Japanese culture, to offer an authentic dining experience to even more customers.

## A New Temari Sushi Experience

'Sushi Kyoto Umemori' focuses on course meals featuring an assortment of colorful Temari-zushi. These bite-sized, round sushi pieces, adorned with maple leaves and edible flowers, look just like a 'bouquet to eat,' offering a fresh dining experience unique to Kyoto.

During service, staff will sprinkle edible chrysanthemum petals right in front of customers, allowing them to capture the perfect moment of presentation.

## Future Prospects

Following the pre-opening on May 15, the grand opening will take place on Saturday, May 30. Reservations are being accepted during the pre-opening phase.

Furthermore, plans are in place to launch 'Sabo Kyoto Umemori,' a tea room serving ohagi (sweet rice balls) and matcha, in June, followed by the 'Umemori Sushi School Kyoto Branch,' an interactive content facility, in July.
