What is the 2026 Theme "Charlotte"?
"Charlotte" is a classic French pastry that originated between the 18th and early 19th centuries, said to be named after Queen Charlotte, wife of King George III of England. With roots in the British traditional dessert trifle, it was refined by the renowned French chef Antonin Carême and developed into the elegant chilled dessert we know today. It features a bavarois or mousse in the center, surrounded by biscuits, with a beautiful form reminiscent of an elegant hat. Its gorgeous and delicate appearance, structural beauty, and smooth melt-in-your-mouth texture require advanced techniques, truly a "crystallization of craftsmanship."

The star of the Charlotte is the mousse or bavarois encased in biscuits. In the "Peach Charlotte," a rich peach mousse that melts smoothly in the mouth is the centerpiece, with a homemade jelly concentrating the peach's umami nestled in its core. Furthermore, by coating the entire cake with a glossy peach jelly, the rich aroma of peach spreads with every bite. Beneath the peach mousse lies a strawberry mousse with a yuzu aroma. By using the sweet and sourness of strawberries and the refreshing tartness of yuzu as a secret ingredient within the rich sweetness of peaches, the aftertaste is surprisingly light and elegant. The toasted aroma of pistachios sprinkled on top, and the moist pistachio biscuit at the base, further enhance the delicate flavor of the peaches.

Charlotte is a gorgeous and elegant confection named after a queen. To express its beauty, I thought peaches, with their delicate and gentle colors, would be most suitable. Also, July is the season for delicious peaches. Considering when customers would be eating it, peaches, which evoke a sense of the season and are loved by a wide range of generations, were the natural choice for the main ingredient. Peaches have a gentle sweetness and rich aroma, and they pair wonderfully with the light melt-in-your-mouth texture of Charlotte. That's why I focused on bringing out the charm of peaches while ensuring the entire dessert harmonizes as a single flavor. It's a creation that pays meticulous attention to the combination of ingredients and preparation methods, not just for visual beauty, but so that the peach flavor can be strongly felt with every bite.

Le Secret I—"Rich Peach Mousse" that Melts in Your Mouth
The "rich peach mousse" enclosed within, the star of the Charlotte.
This is made by combining a luxurious peach jelly, crafted from 100% white peach puree, with our proud Kyushu-produced fresh cream.
"Taiyo's cream is different"—this is what many customers have consistently told us and loved about our fresh cream. The rich milkiness, deep flavor, and noble aroma of milk unique to Kyushu. Its richness is truly exceptional, characterized by a strong taste of the milk's original umami. This incredibly milky fresh cream harmonizes miraculously with the delicate flavor of peaches.
Furthermore, we have luxuriously incorporated "Regina White Peach Liqueur," which Sous Chef Tsuda is most fond of. This exquisite liquor, recreated by Swiss master Divisa from white peaches ripened under the Mediterranean sun, is a masterpiece. Its elegant white peach flavor and umami are preserved, and by infusing it with this aroma, praised worldwide as a "moving liqueur," the mousse's taste is elevated to a supreme level.
Le Secret II—"Homemade Jelly" Concentrating Peach Umami
The taste of "peach itself" that mousse alone cannot express.
The key to this is our homemade jelly.
Here too, we use "Regina White Peach Liqueur" luxuriously, but with a different approach than the mousse.
We slowly simmer 100% white peach puree until it thickens. Careful simmering concentrates the peach's umami to its limit, creating a rich, luxurious texture that feels like biting into a real peach. While the peach flavor from the mousse alone spreads gently and subtly, this jelly adds an overwhelming presence that makes you exclaim, "Ah, this is peach!"
Le Secret III—Light "Strawberry Mousse" to Enhance Peaches
A mousse made with exquisite strawberry puree and our proud Kyushu-produced fresh cream.
This strawberry mousse is not the main star but exists to beautifully enhance the sweetness and aroma of the peaches.
Although it appears to be made solely with strawberries at first glance, Sous Chef Tsuda has a "secret ingredient" here. It is additive-free, pesticide-free domestic yuzu, carefully cultivated in our own farm managed by the representative director.
Strawberries alone can leave a cloying sweetness.
"I want our customers to enjoy this delicate mousse lightly and deliciously down to the last bite."—With this sole intention, we added the refreshing tartness of yuzu as a secret ingredient. The addition of yuzu enhances the sweet and sourness of the strawberries, resulting in a surprisingly light aftertaste.
Le Secret IV—Moist "Pistachio Biscuit" at the Base
For the biscuit base of the cake, we have luxuriously used pistachios from the highest quality region, Gaziantep, Turkey, known as the "king of pistachios." The moment you take a bite, the nutty aroma and deep, rich flavor spread. Its beautiful deep green color and luxurious aroma are a "special" taste that you can tell the difference with just one bite.
We combine this high-quality pistachio with almond powder and bake it. The craftsman's skill lies in baking it quickly at high temperatures to prevent the "moisture," the lifeblood of the dough, from escaping. This results in an incredibly moist, supreme biscuit that locks in the rich flavor of the nuts.
Le Secret V—Glossy "Glaze" Cloaking the Peaches
As a final touch, the entire cake is gently enveloped in a glossy peach glaze.
This also uses our carefully selected "Regina White Peach Liqueur" and special jelly. It not only creates a beautiful sheen but is also calculated to spread the rich aroma of peach with every bite, serving as the final finishing touch.

Le Secret VI—"Poached Peaches" Blooming Like Rose Petals
The poached peaches adorning the top are Sous Chef Tsuda's ultimate pride. Each peach slice is meticulously layered by hand, arranged to bloom like a rose.
It's a delicate process of layering multiple slices, carefully assessing the size, thickness, and color of each peach to create a single rose. Even the layering of colors is calculated, expressing a beauty like a rose blooming in a jewel box. This decoration, imbued with the craftsman's pride, is befitting a Charlotte named after a queen.
Le Secret VII—Hand-Piped "Savoiardi Biscuits"
The savoiardi biscuits, symbolizing the Charlotte, are all hand-piped one by one.

With this thought, our commitment is to bake them at high temperatures for a short time, with minimal browning, achieving a pale, elegant color that harmonizes with the peaches. Yet, they are slightly fragrant on the outside and fluffy on the inside. This creates the gentle texture and fragrance characteristic of traditional pastries.
Le Secret VIII—Piped Pistachios and Fresh Cream for "Completion"
Finally, we carefully pipe Kyushu-produced fresh cream and sprinkle fragrant pistachios to complete the dessert.

Each ingredient has its role. What to add, what to subtract, to make the peaches even more delicious. The answer lies in each of these ingredients. Only when they are layered in a balance where each ingredient shines its brightest is the "Peach Charlotte" completed.
