This is an extra virgin oil certified by Protected Designation of Origin (D.O.P.) Terra di Bari Castel del Monte in Europe and Organic JAS.

Only organic Coratina olives cultivated in the Castel del Monte region of Puglia, Italy, are used. To maximize the polyphenols contained in the Coratina variety, it is manufactured with the utmost care, with harvesting to pressing completed within 6 hours and the pressing temperature kept below 24°C. As a result, it is an oil with a polyphenol content of 690mg/kg, condensing a powerful yet delicate flavor.
