"Deshiko" is a top-grade brand eel from Hamanako Lake in Shizuoka Prefecture. This eel, named with the intention of "De" (tradition), "Shi" (continuous evolution), and "Ko" (delivering happiness), is characterized by its overwhelming tenderness and high-quality fat content. It boasts a plump, thick texture and a special melt-in-your-mouth quality that dissolves as soon as it enters your mouth, yet it's not greasy and can be eaten smoothly. We offer "Deshiko Unaju Kaiseki," which allows you to enjoy the flavors of summer with "Deshiko Unaju" as the star, featuring beautifully arranged "Deshiko." The kaiseki meal includes appetizers and vinegared dishes that complement the unaju, prepared with abundant seasonal ingredients.
The exquisite "Deshiko Unaju" is a masterpiece showcasing craftsmanship, where "Deshiko" is lightly grilled, steamed to a perfect tenderness, and then repeatedly coated with our inherited secret sauce before being grilled to a plump finish.
