The Flavors of the Hard-to-Book 'Suzunari' Come to Makuhari! The Theme is an Exciting 'Summer Festival'
From the Lunch Course
Akihiko Murata, after honing his skills for 13 years at the prestigious Japanese restaurant 'Nadaman', opened his own Japanese restaurant 'Suzunari' in Shinjuku, Arakicho in 2005. He received one star in the 'Michelin Guide Tokyo' for seven consecutive years from 2012 to 2018, and continues to share the appeal of Japanese cuisine through various media such as TV, magazines, and the web. He presents an exquisite special course that expresses the exhilarating 'Summer Festival' with delicate Japanese techniques.
Tomato Goma Tofu
The refreshing appetizer, reminiscent of water balloons on a summer evening, is 'Tomato Goma Tofu'. The smooth sesame tofu is blended with carefully strained tomatoes to create a crisp acidity that stimulates the appetite and is pleasant even for a body tired from the summer heat.
Steamed Egg Custard with Sea Urchin, Crab Roe, and Shark Fin Sauce
Next is 'Steamed Egg Custard with Sea Urchin, Crab Roe, and Shark Fin Sauce' (¥14,000 course only), Suzunari's unwavering signature dish that has captivated customers for 20 years since its opening. Like the brilliant fireworks coloring the night sky, this exquisite dish, bursting with the luxurious flavors of the sea, is delivered with its unchanging taste.
Corn and Grilled Ayu Rice Cooked in a Pot
To conclude the course, we offer 'Corn and Grilled Ayu Rice Cooked in a Pot' (¥14,000 course only), evoking the fragrant stalls of a summer festival. Using plenty of seasonal corn and the deep umami and sweetness of sun-dried seasonal Ayu, this rice is so rich you'll want seconds. It concludes a mature summer festival with heartwarming nostalgia and rich emotion.
Please enjoy this special two-day occasion, where various summer traditions are elevated with the renowned restaurant's unique playfulness and sure-fire skills.
'Suzunari's Special Mini Unadon' Also Available for Doyo no Ushi no Hi!
Suzunari's Special Mini Unadon
July 26th, the day the fair is held, is 'Doyo no Ushi no Hi' (Day of the Ox). To commemorate this special day, we have prepared the 'Suzunari's Special Mini Unadon' as an option (can be substituted from the meal for an additional ¥2,200 for dinner, ¥2,750 for lunch).
Grilled eel, brushed repeatedly with homemade special sauce until fluffy and fragrant, is served over freshly cooked rice. First, enjoy its rich flavor as is, then with the accompanying condiments. Finally, pour hot dashi broth over it for a Hitsumabushi-style experience, allowing you to enjoy three different tastes. Please look forward to this luxurious mini unadon, unique to 'Suzunari'.
Popular Recipes Revealed on YouTube! Live Cooking Class Also Available
On YouTube, launched late last year, Chef Murata's unpretentious personality and easy-to-follow recipes have gained support from cooking beginners. Chef Murata himself will carefully demonstrate three dishes perfect for summer, such as 'Chilled Tomato Somen with Sudachi' and 'Chicken Wing and Winter Melon Soup Stew'. In addition to enjoying a special lunch that includes the demonstrated dishes, his two sons, who also work at 'Suzunari', will join him on stage for a father-and-sons talk show after the demonstration. Secret episodes and off-the-record talks from the family might be revealed! Don't miss this valuable event.

~Profile of Akihiko Murata~
Born in Tokyo in 1974. Inspired by his grandfather, who ran a fugu restaurant, he aspired to become a chef. After graduating from high school, he joined the long-established Japanese restaurant 'Nadaman'. After training for a total of 13 years, including at Nadaman Honten 'Sayokaso' within the Japanese garden of Hotel New Otani (Tokyo), he became independent. In 2005, he opened 'Suzunari' in Shinjuku, Arakicho. His seasonal dishes, based on the concept of 'wabi-sabi', gained popularity, and the restaurant became a hard-to-book favorite, earning one Michelin star for seven consecutive years in the Michelin Guide Tokyo. In 2018, he opened his second restaurant, 'Tokyo Kappo Terunari', also in Arakicho. While managing the restaurants daily, he is also active in various fields, including media appearances and product production.
