Rooibos is only grown and cultivated in the Cedarberg Mountains region of South Africa, a very harsh environment with temperature differences of over 30°C. It has been reported that unfermented green rooibos contains about 10 times more total flavonoids than fermented rooibos, and about 40 times more of the characteristic flavonoid aspalathin.
