Starting Monday, July 20, 2026 (a national holiday), “10 Soba” will launch a new dipping soba series featuring cold 100% buckwheat noodles served with a rich, concentrated tare sauce. In addition to the staple “Spicy Chili Oil Pork Dipping Soba,” three previously limited-time offerings—highly praised each time they appeared—have been revamped and officially added to the series. With the addition of “Green Curry Dipping Soba,” “Chicken and Leek Dipping Soba (with Yuzu and Shichimi),” and “Niboshi Broth Dipping Soba,” the lineup now offers four distinct options, allowing customers to choose based on their daily mood and taste. The summer-limited “Corn Tempura” will also begin sales on the same day. When your usual soba isn’t enough, or you’re in the mood for a change, we invite you to try the new dipping soba series.

100% Domestic Buckwheat Soba from Just 500 Yen】

“10 Soba” offers carefully crafted 100% domestic buckwheat soba starting from just 500 yen. Ten割 soba offers numerous health benefits, including low GI, gluten-free composition, antioxidant properties, and rich dietary fiber. However, because it contains no binding agents, it is difficult and labor-intensive to produce, often resulting in higher prices. At 10 Soba, driven by the desire to make ten割 soba more accessible, we have implemented various cost-saving measures—such as introducing automated equipment and ticket-ordering systems—despite ongoing increases in raw material and logistics costs, enabling us to maintain low pricing. Additionally, our tempura and kakiage made with buckwheat flour are gluten-free, light, and crisp, making them ideal for health-conscious customers. They are fried to order, ensuring a fresh, crispy texture.

We continuously strive to improve our menu and production methods, never satisfied with the status quo. For example, since the end of February 2026, we have upgraded our soba production method to a “vacuum mixing process.” By mixing buckwheat flour and water under vacuum conditions, we achieve noodles with greater firmness (koshi), enhanced aroma, and richer flavor compared to before. This innovation has also significantly improved the traditional weakness of ten割 soba—its sensitivity to heat and tendency to break when boiled—due to the absence of binders.

Moving forward, we will continue to promote the appeal of ten割 soba from Kyoto to the entire nation, aiming to become a beloved, repeat-visit destination in every community we serve.
