[Okayama University] Elucidating Part of the 'Umami Formation Mechanism' in Meat Aging

We are Okayama University, a national core and characteristic research university headquartered in Kita-ku, Okayama City, comprising 10 faculties, 1 program, 7 graduate schools, 4 research institutes, an affiliated hospital, and affiliated schools/kindergartens. As a recipient of the Special Prize at the government's 1st 'Japan SDGs Awards' and a university selected for the Ministry of Education, Culture, Sports, Science and Technology's 'Program for Forming Japan's Peak Research Universities (J-PEAKS)', we aim to realize the Okayama University Vision 2050 and will continue to create new value from Okayama to the world.
